Dit gistextract is rijk aan natuurlijk aanwezige 5’-GMP en 5’-IMP. Het ingrediënt wordt veel gebruikt op het gebied van smaakverbetering, het reduceren van zout, het verhogen van mondgevoel en het maskeren van off-notes. Gistextract CT20 heeft een zoutpercentage van ca. 18%. Het profiel kan omschreven worden als krachtig umami, licht vlees, versterkend.
